Dinners at my household are tedious. My husband and I watch countless videos at least 2-3 times a week for dinner ideas.  The below recipe is the one I recently found online and I made this last night. It was so yummy that I had to share it!


2 pound chicken thighs bone-in, skin-on

1 russet potato, cut in quarters

1/2 tablespoon kosher salt

1 teaspoon freshly ground black pepper

1 tsp dried rosemary

1 rounded tablespoon dried oregano

Pinch of cayenne

4-5 cloves of garlic, finely minced

1/2 cup fresh lemon juice

1/2 cup olive oil

1/3 cup chicken broth for the pan, plus a splash to deglaze after roasting

Mix all the ingredients (except the broth) in a large bowl and allow it to marinade for a couple of hours.

Then place the chicken skin side up and the potatoes on the pan and pour the rest of the marinade ingredients on the chicken and potatoes.

Now pour the chicken broth in the pan too.

Roast at 425 for about 45 minutes, or until the chicken is well browned and cooked through.

After that, take the chicken pieces out and broil the potatoes for a couple of minutes for crustiness.

Once that is done, deglaze the pan and strain in contents, which can be used a gravy.

The dish is now ready to serve. Enjoy!

  1. Where do you get your creative inspiration from?

I am a constant thinker. At any point of time, there is always something on my mind. Daily experiences or sometimes when I read something, I think if this is worth writing. I do not think I am very creative, but I am trying to “think outside the box”.  I definitely need to work on writing more creatively!

  1. How often do you blog?

I try to blog at least 4 times a week. Some days I just like reading other’s blogs and look back at my old posts and see how I could have written it better or if I wrote anything worthy of a read for others.

  1. What motivates you?

This is a little tricky question and took me a long time to answer. I am basically a very positive person. No matter how many times I fail, I cry about it for a few days and I get back to try again.I want to be a very famous artist someday. I plan on hiring my husband as my manager and give him a 10% cut on all the earnings (ha-ha). So, I guess Fame motivates me.

  1. Why did you start blogging?

I always loved writing. In my head, I was a good writer.

Once I got into college, I never found the time to write. I did have the habit of writing journals since I was 13 -14 years old. But, a relative of mine found that book and read it! (Was so mad)… after that I stopped. So, whenever I wanted to write about anything, I would write it on a paper, read it several times and then burn it.

Then 4 months ago, my husband suggested I start a blog. I agreed to write and make it public for a month and see the response or else I’ll just write private posts which may be fun to read years down the line.

Surprisingly, people started commenting, and liking my posts and started getting followers and that motivated me to continue!

  1. What is your favorite quote?

I got this quote from a fortune cookie. Most of them never made any sense to me, but this one somehow felt like something I need to keep with me. So, I kept in my wallet.

“Stop searching forever. Happiness is just next to you”.

  1. Describe yourself in three words?

Stubborn and Confident and Amazing!

  1. If you were a famous brand – what brand would you be and why?

I would love to be Apple. Their tagline is “Think Different”.

  1. When was the last time you got angry?

The last time I got angry was at my sister. We rarely fight, but even when we do, it’s nothing that will last longer than a day.

  1. What is your star sign? Are you like your star sign?

I am a Leo. I just googled Leo characteristics and it showed:

– Confident

Yes, I am like my star sign.

  1. If you could go back in time where would you go?  

I would maybe want to go back when I was 18 – 19 years old. There are a couple of things I wish I had done differently.

I combined last week and this week, mainly because week 4 I didn’t workout even a single day. I wasn’t lazy… it’s just that I was unwell and was feeling anxious few days.

walked 2 miles. Couldn’t do much since it’s still cold here and rains almost everyday!

Ring Of Fire!

In response to The Daily Post’s writing prompt: “Ring of Fire.”

Being born into an Indian family, spices have always been a part of my life. Chili powder, cumin powder, turmeric and garam masala powder are used in all dishes.

The dish is considered incomplete if any of the above spices are missing! Not to forget the various types of pickles.


Don’t get me wrong, the food tastes amazing and I totally love it. But, I am not a fan of spicy food. Anything that burns my tongue or makes me tear up is not worth eating. Moderation of every spices and Voilà… no need to worry about the next day!

The photos I’ve shared was taken during my trip to Disney World in Orlando, Florida. It’s the “Festival of Fantasy Parade”.
The Magic Kingdom felt alive with all the music and dancing!

I watched The Lion King yesterday, hence the title!

I had a nightmare, that I have been abducted. The in-between details are hazy, but I somehow survived that gruesome ordeal. (I think I am watching a lot of CSI). Sometimes dreams can feel so real.

For the past couple of days I have been feeling anxious, for reasons unknown. There is even an app to check anxiety levels. So, I took the test and the result was “Mild Anxiety”. I have never felt the way I have the past days so I have no clue on what I need to do. Drinking chamomile tea does make me feel better, been drawing a lot …that calms me down too.


This picture was taken in Payson, AZ. I simply love this picture. The view is so calm and serene. Isn’t nature just wonderful! It has it’s own way of showing that the world is such a beautiful place. I have been looking at this picture the whole day and also is my desktop background now.
